Product Introduction
Chitosan is a linear polysaccharide composed of randomly distributed β-(1-4)-linked D-glucosamine (deacetylated unit) and N-acetyl-D-glucosamine (acetylated unit). It is typically produced through the deacetylation of chitin, which is found in the exoskeleton of crustaceans, such as shrimp and crabs, and cell walls of fungi [1]. Chitosan is used in a variety of applications, including as a food preservative, a dietary fiber, and in biomedical applications due to its biocompatibility and biodegradability [2].
Production Process
The production of chitosan generally involves several steps. First, chitin is extracted from crustacean shells through a process of deproteinization and demineralization using alkaline and acid solutions, respectively. The chitin then undergoes deacetylation, typically using a strong alkali like sodium hydroxide, to remove acetyl groups and convert chitin into chitosan. The degree of deacetylation affects the solubility and other properties of the final chitosan product [3]. The resulting chitosan is then washed, dried, and milled into the desired particle size [4].
Product efficacy and function
Chitosan has several notable functions. It can act as an antimicrobial agent, inhibiting the growth of various bacteria and fungi, which makes it useful in food preservation [5]. It also displays antioxidant properties, scavenging free radicals and reducing oxidative stress [6]. Furthermore, chitosan can bind to fats and cholesterol in the digestive system, potentially aiding in weight management and lowering cholesterol levels [7].
Product Application Scenarios
Chitosan finds application across several industries. In the food industry, it is used as a coating for fruits and vegetables to extend shelf life by reducing spoilage [8]. In agriculture, it can be used as a seed treatment and plant growth promoter, enhancing plant defense mechanisms [9]. In the biomedical field, chitosan is utilized in wound dressings, drug delivery systems, and tissue engineering due to its biocompatibility and ability to promote cell growth [10].
Packaging and Storage
Chitosan should be packaged in tightly sealed containers to prevent moisture absorption and contamination. It is recommended to store the product in a cool, dry, and well-ventilated area, away from direct sunlight and incompatible substances. Under proper storage conditions, the shelf life of chitosan is typically 24 months.
